Stolen iPhone and all other devices disappeared from FindMy

My iPhone 11 was stolen out of my bag last night. I locked it/marked as lost in Find My, and my Apple password is very strong so there's no way anyone's guessing that to gain access that way. This afternoon, FindMy picked it up on a specific location in the city I'm in and I was planning to go there tomorrow morning to try and get it back. I just checked again and now the phone, as well as *all* my past and current devices, have disappeared from FindMy. Presumably the thief has somehow done this, right? I can't understand how they've deleted not only the phone they stole but everything else, too. I'm absolutely livid that this is possible, but I'm also extremely worried that they've somehow gained access to everything else on my phone too. Can anyone advise?

Did you fall for a common phishing scam: You may get a text or email from “Apple” or “Apple Security” (or sometimes “Police”) saying your phone has been found and to click on a link to see its location. This is NEVER from Apple or from law enforcement; it is from the thief or fence to steal your Apple ID and identity. Delete any such message without responding to it. Apple never gets involved in lost or stolen devices→Avoid phishing emails, fake ‘virus‘ alerts, phony support calls, and other scams
