hello i am currently with AT&T on iphone 11. i just purchased the iphone 15 pro max from Spectrum. I chose to keep my number. since it’s eSim for the 15 pro max, and my 11 is physical sim how would i go about activating the 15 pro max?

You need to contact Spectrum. They will transfer the number from ATT and the activate the eSIM. Do not cancel the ATT account until the number is transferred.
