i cant turn on guided access
When I press three times on the button of my iPad Pro it doesn’t turn on guided access anymore

Are you certain that you were ever able to enable Guided Access with a triple-click of the top (sleep/wake) button?
I ask as the triple-click Accessibility Shortcut cannot be configured to trigger Guided Access. Available options for the triple-click can be found in iPad settings:
Settings > Accessibility > Accessibility Shortcut - select as required
However, Guided Access can be enabled elsewhere in Accessibility settings:
Settings > Accessibility > Guided Access > Guided Access - set to ON
