How to resume data transfer between new iPhone and old iPhone

I was setting up my new iphone and transferring data from iphone 13 pro max to iphone 15 pro max. But I cancelled the setup and now I can’t transfer my data from the old iPhone to the new iPhone. Also I am afraid to reset the new iPhone and lose my e-sim.
