how do i change my apple ID to a new email

I'm trying to change my apple ID by adding a new email address as my telco has decided to randomly delete my old one. When i try add the address (its a gmail account) it wont let me do it and says "This email address is not available. Choose a different address"

I've tried two different gmail addresses with the same error

Are you doing this on appleid.apple.com?

And are you clicking the little minus symbol with a circle around it next to you current Apple ID (email address used to log in)? Rather than just trying to associate an additional new email address to the account I mean.

Also, are you sure you haven't already created or linked those gmail addresses with another Apple ID?
