I copied & pasted something to create a new document . I would like to use markup though I don't see the option anywhere ?
And , can a document be created without the pre-formatting ? I don't understand why I have to change Apple's templates , I just want to make a simple document ?

If you want a simple document with no formatting in Pages, then use the Blank, not the Blank Layout template.
I suggest you give the following a good review so you understand what functionality is available to you in Pages for iPadOS.

One could imply from the OP that they wanted a simple document without any formatting that they would be required to change. That points to a blank, word-processing template, not a schooling about Pages templates. A blank template would not include any placeholder content, that a user could add later if appropriate.
