How do I open a .mov file that QuickTime says is incompatible?
.mov file...and then I get This file contains some media which isn’t compatible with QuickTime Player.

What does MediaInfo > View > Text say about the movie codecs (you can paste it as "Additional text")?

I use IINA for such movies. Or convert the to some compatible codec with Handbrake, Shutter Encoder, Avidemux, ffmpeg etc.
