You’d be well-served to “rip off the bandaid” and setup separate AppleIDs.
With Apple’s Family Sharing, there’s no longer any reason to use a common AppleID; and NUMEROUS reasons to not do so.

You can create a single AppleID for the entire phone, but not for the individual application.

I have reviewed the information links and advice… thanks! At the fear of asking too much, I have outlined the steps to be taken. A review and feedback would be greatly appreciated.

An update… after having explored available options, including some great advice from others, I have arrived at what appears to be a simple approach. My wife and I will continue to maintain shared access to; Mail, Contacts, Calendar and Photos by both of us continuing to use the same Apple ID. Meanwhile, we will track our individual health data in Apple Health by one of us disabling the connection of our Apple Health app to iCloud. This will mean that one of us will store health data only on our personal iPhone and not sync it with iCloud. Please let me know if I am missing a problem with this approach.

Apple has no formal account merging or transferring process. The things below will help you in doing ongoing or one-time transfer of as much as possible from one account to the other, but some things can never be transferred (namely purchases), only shared.
You can use various iCloud sharing features for some ongoing data sharing.

Apps and media bought with one ID are permanently associated with that ID. Look into using Family Sharing to continue to be able to use items purchased with one Apple ID with other Apple IDs, and for some data sharing features.

The next section may sound tricky but it lets you merge some things on a device where you have already signed in with an old account but want to use a new account and incorporate data that is already on the device from the old account. Incidentally, the data will then propagate to other devices using iCloud with that new ID. (I haven't tried this with a computer but it may also work with a computer account signed into an old ID.)
If you have signed into the first ID on a device then fortunately when you sign out of that ID it asks you if you wish to retain the data from the old ID on your device (toggle the ones you want to on). If you keep data on the device then when you sign in with the other ID it will merge this data with the account signing into the device. You can later delete individual items from the old ID that you do not want. Note that only content physically present on the device like contacts, photos and videos will be retained. Meta data such as a game play scores that are tied to a specific ID or are only on a vendor's Apple ID-specific database remotely will not be retained. Also turn off storage optimization before doing this. With Optimize Storage, smaller, space-saving photos and videos are kept on your device while all of your original, full-resolution versions are stored in iCloud. Make sure photo optimization is turned off so the full quality versions from the old account are actually on the device before merging the content into your new account. https://support.apple.com/HT205703 You can turn optimization back on again once you are fully using your new ID on the device.
Even though apps may remain on a device and may work for a while, you will not be able to update them or redownload them unless you buy them again with this ID or download them with this ID using Family Sharing.

All that signing in and out sound like a big nuisance to me.
You would have to erase all data on the phone between accounts unless you wanted to have them merge on you. If you sign in on an iPhone with a second account without erasing it completely, the data from the old account will merge into the second account and then propagate through iCloud to all that user's other devices. iPhones are strictly single-user intended devices. After that you would have to restore from a backup. I'm not sure if it is worth it. If you truly want to use a second account then buy another iPhone.
View and remove your devices that are associated with Apple ID purchases - Apple Support - Read "More about associated devices" at the end where it refers to the 90 day wait. This applies to re-downloading past purchases (you can make new purchases), automatic downloads, and iCloud based services such as Family Sharing, Match, and Apple Music.
That should work. Make sure you do regular backups with a computer since the data will now be in one place only.
My wife and I have shared a single Apple ID for many years and doing so has enabled us to share important information in a simple and easy to use manner. We don’t want this to change. However, we have just purchased Apple Watches and want to take advantage of the personal health tracking. Apparently, each individual must have a unique Apple ID in order for this to work.
Thanks for the recommendation on using Family Sharing. I’ve just now followed the links that you provided and it appears easy enough to set up. However, while several items are listed as being shareable, I can’t find a list of what cannot be shared. For example, is it possible to share Contacts, Calendar and Photos?

I don't use Family Sharing. My memory from what others have said is that Contacts is not easily shared, but even without Family Sharing you can use Airdrop to transfer them to another user.
