I have a new 10th gen iPad with several email accounts on it. Swiping left to delete a mail it moves so fast I barely touch it and swooosh… it’s gone. How could I slow this down please?

Try to avoid a full-swipe to the left - as this will indeed trigger the quick deletion. When use the swipe gesture, just swipe a half-column width - and release - to show the More, Flag/Unflag and Delete buttons.
If you are having getting to grips with the left-swipe gesture in Mail, instead touch-and-hold the message to expose the Action Menu - and from the menu select Delete Message.
