Im not sure if its just a new thing in iOs 18 but why is the part where my phone charged this red-ish orange?

The orange part of the graph indicates your phone was charging via a "slow" charger.

The orange on your charging history represents you were using a slow charger to charge your iPhone. Ensure that you’re using a charger sufficient enough for charging your iPhone.
Here's what the other colors on your iPhone charging history represents:
Green ⇢ iPhone battery above 20%
Red ⇢ iPhone battery below 20%
Yellow ⇢ Low Power Mode
Orange ⇢ Slow Charger
This is the case when charging via MagSafe on 15 pro max. Is it not okay for it to ‘slow charge’ or is it just letting me know that it isn’t charging as fast as it can? If you see what I mean
The Slow Charger warning indeed is new to iOS 18, so you should probably use a higher Watt charger.
According to Apple, you need a 20W or higher power adapter to fast charge your iPhone 12 and later.
Since there is a charging symbol of the same color, the picture would logically indicate that the charger was plugged in to the phone during this time.

You are correct.
Before the iOS 18 update the phone was charging fine. Now it takes about 9 hours to fully charge!

All non 16 iPhone models only support 15w magsafe charging, there is no way to go higher on MagSafe chargers.
Hi! It happens the same on my iPhone 13 when i use a magsafe charger with a 20w adapter. Its normal? I’m on iOS 18 too (Sorry my english 😖)
Then you should try using a higher Watt charger.
