I ordered my iphone 16 pro max at 5AM PDT on september 13, initially it was supposed to arrive today, friday september 20. On "my orders", it still says that it´s friday september 20, but when I track it in UPS it says it will arrive on monday. Is there any way I can know for sure when it will arrive? Also, the package is currently 5 hours away from my location.

You are NOT speaking with anyone from Apple here. This is a user to user only forum. As such we don't know what's up with your order or for that matter anything about your order.
You need to contact Apple directly for help. Since you are in the US, you can call Apple at: 800-MY-APPLE and make sure you know your order number.
I ordered mine from t mobile on September 22nd. ETA of Oct 9-23. I received mine one Oct 15.

I ordered mine on 25th Sept. Suppose to arrive between 17-24 Oct. Still in processing. No change yet. When did your status changed?

Your order will say Processing until just before it is being prepared to ship, followed by shipped. There is nothing wrong. Be patient. Today is the 17th. Your order is scheduled to arrive between the 24th and 31st. You'll see a process change about two days before your phone arrives and this is completely normal.
