Why is there an “English” option in the language settings?

There’s are many variants of English. However, there is an option to choose just “English”—no location.

Why? How different is it from American English?

By the way, in the keyboard settings it does not exist. Every English option has a location attached to it.

The interface language of an app is supposed to follow the order of the preferred languages list in the language and region settings. But whether app authors provide the files for different languages to do that is up to them.

So for an app that has both US and British English localization files, you can change the spelling in menus and dialogues by moving one of those languages to the top of the preferred languages list.
