Why cant I connect my new iPhone 16 to my Apple Watch SE?

Bluetooth is on, Wi-Fi is on, cellular data is on, these are my devices registered to my Apple ID. It does not show up when I try and pair it through the Apple Watch app on my iPhone 16.

iPhone 16, iOS 18

The most usual reason an existing Apple Watch won't pair with a new iPhone, is it wasn't unpaired from the previous phone. But Apple has a link you can follow which will walk you through how to pair your watch if you no longer have your previous iPhone --> How to pair your Apple Watch with a new iPhone - Apple Support
