iphone 15 pro ios 18 was stolen.

My iphone 15 pro with iOS 18 has been stolen. I started deleting data from my iphone via icloud. The status is "pending deletion".

Will I be able to delete data from a stolen smartphone?

will attackers be able to access my data? I changed the password from appleid

"Pending deletion" normally means that the iPhone has not connected to a cell service or WiFi since you issued the command. It should complete the erase if and when next the iPhone connects. Since you would have had Face ID and a passcode set on your iPhone before it was stolen, the thieves will not be able to access your data, and won't be able to use the iPhone at all due to Activation Lock.
