Save Texts to PDF

I've been using iMazing, which razmee209 mentioned, for a couple of years (since PhoneView stopped being supported). I've been quite satisfied.

I would recommend, however, that before you do anything, you consult with your attorney. If you mess up the handling of things you intend to use as evidence, that might cause issues.

Yes, you will need to purchase touch copy or imazing to export that data to your pc/mac and then convert to pdf.

I got a notification from PhoneView recommending iMazing when they were about to remove their product.

Ditto. There was a special deal to switch as I recall. I don't like iMazing quite as much but it has gotten better and does the job.
