How can I reinstall macOS Sonoma from recovery after deleting Macintosh HD in Disk Utility?

When I try to erase the entire internal APPLE SSD volume it can’t unmount disk0 because it’s in use by process 0 (kernel) and I also can’t erase or unmount any of the individual disks because they seem to be in use too.

use Option-Command-R or Shift-Option-Command-R to start up from macOS Recovery over the internet.

 macOS Recovery installs different versions of macOS, depending on the key combination you use.
