i just bought an iPhone 16 pro, and there is no sign of any satellite capability. Not even the Demo Mode shows up in settings

Your screen shot shows only the top half of the menu. The satellite demo is at the very bottom. Have you scrolled to the bottom of this menu. On my iPhone 16 Pro the satellite demo is shown and works even with WiFi and Cellular active. I just now went outside and got a successful connection. The instructions say that you cannot receive or make phone calls while the demo is in progress. That probable means the demo temporarily turns of WiFi and Cellular while connecting.
In short, it just works.

I could be wrong about the demo. My iPhone is an earlier model without satellite capability, so I was going upon what I thought I had seen in other threads here. Mea culpa.

You need to be outside, on relatively open terrain, with a clear view of the sky. Trees with light foliage might slow down the connection and dense foliage might block it. Hills or mountains, canyons, and tall structures can also block the connection
I’m also currently having the exact same problem as you, I just purchased this iPhone 16 pro yesterday from apple and there is no option for SOS Satellite demo. There is nothing in the control center and in the settings

I flew to Canada , i live in the states full time.
I turned my phone back on and it is in satellite mode. I do not know how to turn it off. I’m control center, I see satellite, but says do you want to try demo? No option to turn off or even on.

This thread is people that have no satellite mode at all.
Please start your own thread. Use the Ask the Community link in the top center of this webpage. In your new question, please include your iPhone model, iOS version, and whether a forced restart was performed.
And if you’re not running iOS 18.6.2, update.

My understanding is that the demo will not appear as long as you have a cellular signal or a Wi-Fi signal.

The Satellite Demo will work with cellular and wi-fi signal present. As noted earlier, you are not showing the entire page for Settings. Here is the page from my iPhone 16 Pro Max.
