I want to get a better overview of my calender by sorting my bookings by type with the use of color coding, but dont find how I can do that in the calender apps like I can on Outlook.

Meanwhile, you may want to look for a third-party app that does what you want. Week Cal (very full-featured!) will allow you to assign custom colors to individual events.
You do understand that multiple “calendars” can all be displayed on your screen simultaneously. ???
e.g Red calendar for “work” … Blue for “home and family” … Green for “hobbies” … etc.
In Apple’s implementation, a calendar can be thought-of more as a “category”
Each “calendar” (category) additionally can be separately shared with selected contacts as desired. e.g. Blue w/ your family, Red w/ business associates, etc.

tried that but would like to have only one calender and have 10-15 colors (and not calenders)
Thats how I have solved it today, but its not a great user experience.
