After I updated my phone my watch app had a pop up screen saying I need to update my watch but it always just said update failed after a while so I tried un pairing it now I can't pair it again without the update

Did you try to erase your iPhone, set it up again as a new device and then try to pair the watch?
Restore your iPhone, iPad, or iPod to factory settings using a computer - Apple Support
Make sure to back up your iPhone before you do that.
If you could pair your watch after that, restore your iPhone from the latest backup to get all your data back.
I can't open the watch app. I just get message that I have to update the watch. I can't connect it back to my phone cause I unpaired it
I can open the watch app but when I try to pair with my watch it says I have to update to continue
