An iPhone is running either iPhone OS if it’s truly ancient, or is running iOS as this variant of macOS is currently known. Not “Mac Osx”.

iOS 18 is the penultimate version of iOS.

What is the source of this “Mac Osx“ text? Are you reading telemetry or analytics data, or maybe looking at a web service login-related response email from some archaic server somewhere, possibly with some transcription errors arising?

As a data backup, no. iPhone backups are either uploaded to iCloud, or are made to a local Mac or PC.
