No, your iPhone is not running Mac OS X, OS X, macOS, or “Mac Osx”.
An iPhone is running either iPhone OS if it’s truly ancient, or is running iOS as this variant of macOS is currently known. Not “Mac Osx”.
The IOS is 18.7.1
iOS 18 is the penultimate version of iOS.
What is the source of this “Mac Osx“ text? Are you reading telemetry or analytics data, or maybe looking at a web service login-related response email from some archaic server somewhere, possibly with some transcription errors arising?

Thank you for your help. I know I have been asking very random questions as of late.
I believe that the other phone has beta software on it.
I would here not suggest running beta software. Not at all.
Here is how to revert: How to uninstall iOS or iPadOS beta software - Apple Support
so I was thinking about using this as the backup?
As a backup phone? Sure. That’s entirely your choice.
As a data backup, no. iPhone backups are either uploaded to iCloud, or are made to a local Mac or PC.

Okay.
As a means to learn more about your iPhone and its apps, here is a list of the (free) product classes available at many local Apple Stores: Today at Apple - Apple
Sorry, your question is not clear.
What is the issue?
Where are you seeing that your new iPhone is using Mac OSx?
Why is that a problem?
Please explain your issue in detail and somebody may be able to advise.
