if screen recording and the lock screen kicks in because of display auto-lock, the screen recording stops with the following Notification.... could someone kindly point me to where this Notification Setting is located?

There is no option to remove the message. It is not actually a Notification where you can change the type or sound of the notification, it is a system message. You can send Feedback to Apple here if you wish to have the option to not have that message appear for some reason.

For me, I get the message on the Lock Screen that it had been saved to Photos every time, but never with a sound. Sorry, but not sure why you are getting different results that would appear to be random.
Does this seem to happen only with Auto-Lock or also when you manually lock your phone?
Using Manual Lock I either get no recording and no notification, or, a recording and a notification without sound. I've been trying to ascertain any logic behind it, length of time, what's on screen, using mic or not, but I can't find anything that influences the outcome. Random.

ahhh... Analytics Data contains many replayd bug_type 309 entries corresponding to the time I was trying out Manual Lock behaviour. Will leave it there in that case. Thanks again for your help 🙏
