My iphone and ipad no longer shows 'English (US)' it only shows 'English' - and in the autocorrect I'm getting UK spellings. If I search for English (US) it will come up checked, but that's not what's happening with autocorrect or spelling. It's coming up with UK spellings! Help! It's annoying!

Go to settings / general / keyboard / keyboards / add new keyboad and put English US on the list and remove everything else

Language & Region has nothing to do with spelling, only the menus and dialogues of the user interface, it’s the keyboard settings that regulates spelling/autocorrect in iOS.
Yes! That was it! Somehow my keyboard got switched to UK! Still only showing “English” in language and region but the spelling has become US English!
