I have a Mac Mini and am wanting to purchase a label printer (not Dymo) which works well with Tahoe 26.3 (preferably Bluetooth). I’m in the UK and looking mostly to print address labels for letters / cards, etc. The choice is bewildering and I really don’t know where to start. Would appreciate your advice, please.

Before you jump at that one or any other, be aware that the question you ask is extremely broad. The first things I would ask are why Bluetooth, why not a far less expensive and far more capable general purpose printer with inexpensive label stock with downloadable address label templates, what software do you intend to create those labels... a lot of "whys". Your answers to those questions will lead you to a solution, rather than someone else's answers leading to a solution that does not take your needs into account.
Even though it's written for printers in general, I strongly encourage you to read MrHoffman's comprehensive User Tip Which Printer Should I Buy? - Apple Community. Otherwise every single answer you receive will result in you saying "but it doesn't do this" or "it doesn't do that". As bewildering as the choices might be it's up to you to perform your own research.
Start with AirPrint. Immediately rule out anything that does not have it. That will reduce your choices to a manageable few.
yeah added, think if you want bluetooth because it's wireless then a wifi enabled printer would likely be the cheaper option than a bluetooth one. Also Airprint is wifi, so if you wish to print from ios devices then bluetooth would only be an option if the printer maker have a printing app that support that model in app store.
