You do not need to complete a rollback. I was in your situation and Apple Support (on the 3rd escalation) provided me with the solution and the explanation. What is happening is that Apple iTunes needs one driver and Windows has updated the one it thinks is correct.
Try this.... Plug your phone into the computer. Go to Control Panel - Hardware and Sound - Devices and Printers. Right click on Apple iPhone - Properties. Go to Hardware and Properties again. Choose Drivers tab and click update drivers. This will source the Apple specific driver and not Windows. The driver you are aiming at in this panel is 'Apple Mobile Device USB Driver'.
