Since the update to High Sierra, a Preference I set in Mail keeps changing itself.
I prefer the Classic Layout which is chosen from Mail > Preferences > Viewing and this takes effect correctly when I set the Preference, but it keeps dropping out every third or fourth launch so Mail reverts to the modern layout. Anybody else seeing this?
iMac (27-inch, Late 2012), macOS Sierra (10.12.6)
I finally resolved this on my own. I had to delete the correct preferences file. It is here:
/Users/{your username}/Library/Containers/com.apple.mail
It is actually a folder. This seems to be the modern method Apple uses for preferences.
I reported it to Apple too. I have to admit that I believe my issue is something wrong on my end because I cannot find very many other people who also are having this kind of problem.
Happens to me every few days or so. Annoying.
I have the same problem on my Mac Mini 2014, very irritating!
Something I have found for my case, every so often when sending
a reply to an email, it flips out of classic mode.
Just for info: this issue in not fixed in 10.13.1
Just another "me too!" comment here. I did also send feedback to Apple. Hopefully this will be fixed in 10.13.2.
Same thing is happening to me since High Sierra. I files a bug rpeort with apple.

Why does Apple change things who worked well?
I have the same problem .... without any cause effect and extremely random, mail loses all settings. It never happened in 12 years I am using Mac. Wondering why the quality check is so lose?

Yes, I see it on my iMac/macOS HS 01.13.1 too, once or twice a week.
Unfortunately running Onyx appears to resolve the problem only briefly, then it returns.
Same deal, it happened yesterday and again today. I don't know if it's tied to this, but Security Update 2017-001 also installed yesterday, not sure if it was before or after the layout switch.
The problem with Mail Preferences was present before and continues after Security Update 2017-001.
