It appears that Apple has recognized the problem, and has provided this temporary fix in this support document. If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support Watch for a permanent fix in a later update.

I was having the exact same problem today. I think I found a fix by going to General -> Keyboards-> Text Replacement. Then add a new one by hitting the plus sign. I just said make I change to I. Seems to be working!
Easy fix!!! It's a keyboard problem with apple!! Not your phone!! Download the GBOARD APP THE GOOGLE KEYBOARD FOR NOW . to general, KEYBOARD, Delete the English keyboard , And change to GBOARD! It's functional for now at least until apple fixes their keyboard ! Anyways the GBOARD is pretty good too!
I had the same issue. I fixed it by going to General > Keyboards > turn off shortcut

Oddly enough, my Mac has not been affected
No Mac has ever had this problem (other than when viewing stuff sent by people who had not updated their iphone).
Do let us know if after updating to 11.1.2 you still get the bad result when YOU type "I", and in which apps it happens.
I already had iOS 11.1.1 when this issue started happening to me. On a positive note, I just installed iOS 11.1.2. I tested iMessages and Email and am so very pleased to report the keyboard predictions work as expected - meaning, "I" was *not* being replaced with A and symbol in my very brief testing. YaY!! Hopefully, it will remain this way :-)
Apple has released iOS 11.1.1 which addresses this
specific issue among others. Suggest you update as
soon as possible.
1. Try syncing with your iTunes computer. 2. If that doesn't work, do a full backup and then restore to factory settings from the backup. 3. If that doesn't work do a factory restore and set up as new.
I had the same issue, and fixed it in this way too, by creating a shortcut from “I” to “I”. Autocorrect is still trying to catch it where it can. I have been having wild keyboard issues all evening: random words get capitalized or several letters will appear when I thoe One (that was typing “type one”), it’s like the keyboard sensitivity and location is off as well. Note, I’m not using the new “one hand typing” feature in iOS 11.
The autocorrect from I to the unreadable symbol seems to be a bug affecting lots of iPhones.
I spoke with Apple. They are aware of the issue. Their engineers are working. I’d expect an update coming out shortly. All those options below didn’t fix issue. Unless you want to turn off auto-correct but that’s annoying.
None of this worked for me, but oddly enough updating the Bitmoji ap in the store did? Try it and let us know
settings>general>reset>reset keyboard settings
had the same issues had to replace "i" with a capital "I" because having both lowercase wasn't working! now i have no problem!
I too am having this same problem. Strangely enough though I’ve noticed it today in a Facebook post, but if I copy the text of the post and paste it, it doesn’t show the strange characters. As a current work-around, when I type the letter I, I make sure to choose it from the suggestions before continuing.
You would have to be talking to Apple for them to hear you. This is a user-to-user technical support site. Send as much detail as you have here: Feedback - iPhone - Apple
