It appears that Apple has recognized the problem, and has provided this temporary fix in this support document. If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support Watch for a permanent fix in a later update.
Yeah this started happening to me today too. It’s driving me nuts. This needs to be addressed in the next update for sure.
So, Is anyone at Apple even embarrassed by this kind of thing any more? It doesn't seem like there is adequate discipline in coding or testing.
That worked but you have to put the I woth a space after it as it won’t recognize a phrase without two characters. Thanks for the help

This is not working for me.
While it's fixed on the iPhone, the A ? still shows up on my Apple Watch when viewing the text even though it shows the right way on the phone.
This didn’t start happening to me until I updated to 11.1.1.
