That worked but you have to put the I woth a space after it as it won’t recognize a phrase without two characters. Thanks for the help

It appears that Apple has recognized the problem, and has provided this temporary fix in this support document. If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support Watch for a permanent fix in a later update.
This worked for me. The key is to have a shortcut for both the uppercase and lowercase (I.i)

Unfortunately, if it is not working for you at this point, you will need to wait for the fix Apple is working on.
While it's fixed on the iPhone, the A ? still shows up on my Apple Watch when viewing the text even though it shows the right way on the phone.
This didn’t start happening to me until I updated to 11.1.1.

Autocorrect changing the letter “I” to symbols
