I am having this same issue. I had to turn off my auto correct which is super annoying. I also did the text replacement from I to I like someone else mentioned and that did not work either!

It appears that Apple has recognized the problem, and has provided this temporary fix in this support document. If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support Watch for a permanent fix in a later update.
I’ve tried to reset my keyboard and then did a back up and reset all settings... at first it worked but later today it came back. Any other suggestions?
This worked for me- thank you!!!
None of this worked for me, but oddly enough updating the Bitmoji ap in the store did? Try it and let us know
had the same issues had to replace "i" with a capital "I" because having both lowercase wasn't working! now i have no problem!
Good fix but to me that’s just a band aid. Apple should do an update to fix this bug. It’s very frustrating.
Very frustrating
Sadly this did not help me
This works but it still flashes code before it changes it.
Same problem here even after downloading an update on 11/5/2017. It’s really frustrating
I had the same issue. I fixed it by going to General > Keyboards > turn off shortcut
Yeah this started happening to me today too. It’s driving me nuts. This needs to be addressed in the next update for sure.
Having same problem. I think apple is aware. Only way to solve it now is to turn off autocorrect until they fix it.
Turn predictive keyboard off
So, Is anyone at Apple even embarrassed by this kind of thing any more? It doesn't seem like there is adequate discipline in coding or testing.
Autocorrect changing the letter “I” to symbols
