It was done by holding down the power button until the swipe to power off prompt appears, and then pressing the home button.
Used it for plenty of things, can’t I do this on iPhone X now lol?

After giving up, since I can’t find anyone on the internet who knows the answer to : how to clear ram on iphone x (like on 7 or 6) ?, I finally found/figure out the answer.
The key is:
1) the “slide to power off” screen
2) and the home button
Steps:
1) go to the “slide to power off” screen by:
Settings app -> General -> scroll down and click “Shut Down”
2) then click and hold down the “Home” button.
Yes, I know. There is No PHYSICAL/mechanical home button on the iphone x. But it is still there.
So where is the “Home” button? Just in case you forgot, it is available through:
Settings app -> General -> Accessibility -> AssistiveTouch -> Enable AssistiveTouch -> Customize Top Level Menu... -> Make sure “Home” is set to one of the icons -> and there you have it.
I can finally clear the ram again just as I do before.
The reason for doing it, is a totally different topic.

Well then what is the purpose of this function? Using a usage monitor it does show that the RAM taken up decreases.
It can be used by Apple engineers for testing.

Sorry. Hold the cancel button instead of the volume once you get the option to power off works.

Open any app and press the inch long black bar on the bottom of the screen then drag it up about a third of the way up the screen and then to the right. That app plus all the other open apps will show up. Press and hold any open app and a small circle with a minus sign will appear in the upper left corner of the open app window. Tap the minus sign and the app will close. You can keep closing open apps until they are all closed.
Here are a go,
1) Open up any app
2) use the delete bar at bottom of IPhone X and slowly drag upwards towards centre of screen
3) press and hold on one of apps and the minus sign - appears on em all,
4) simply delete em one by one? or swipe app upwards to clear
