Odds are your bluetooth device was connected to your previous phone. Here is what I did to correct this problem.
On your old phone, go to it's settings and go to bluetooth and disconnect the device or forget the device.
Consult the owners manual of the device you're trying to connect, or look it up on the internet to get the instructions for that device to pair with bluetooth.
Follow the instructions on how to pair that specific device. Some want you to have your iPhone X turned on and searching for bluetooth devices, and some do not, so follow that manufacturers directions as if it is a brand new device that has not been paired yet.
This worked for me, and all is good in my iPhone X world now.
Not to add complexity to your issue, but...
See if someone at your Toyota dealership (or a friend) has a Samsung Galaxy S8 and have them try to use it with your 2010 Prius. Why? The iPhone and the S8 use the same Bluetooth chipset with BT 5.2. If the S8 doesn't work then you need to work with Toyota. If it does work you need to work with Toyota and Apple to find a resolution.
My Mazda 6 Wagon (2012) is having BT issues as well. The Mazda EU support have informed me that it’s always the iPhone users that is having BT connection/BT sound issues. I fully support that Apple has the biggest responsibility to make sure that the BT connection and BT sound works as it should, even with a car that is 6 years old and have worked perfectly with iPhone 5, 6 and 7.
Regarding my BT issue, I’ve written about it in this thread, but in short: I’m able to establish a BT connection but when streaming music from any source, the music cuts every 3-5 seconds. I’m working with both Apple Senior Support and Mazda Support for EU region.

There are issues from time to time with all Bluetooth devices, especially as devices are updated to newer standards than the ones in place when the car's device was manufactured.
My IPhone X won’t connect to my Fossil watch or my car. I have tried every tip I have seen on this thread all the way back to November. It connects to my JBL speaker and my hybrid Smart watch but nothing else. Is there an update coming to help with this? I’m running 11.2.6 right now.
I purchased my iPhone X last Thursday. I spent at least 5 hours minimum with Apple support. The lack of Bluetooth functionality was one of several issues. On Sunday i exchanged my X for new to rule out a hardware issues. Today I setup my X and still have the issue this thread is communicating about. I have no ability to see or pair any devices. What is the latest suggestions on this issue?
I am running 11.2.6 and waiting for a call back from Apple 2 Tier support. Unfortunately my local Genius bar techs won't be able to see me until March 13th at the earliest.
This reminds me of the type of support and lack of response Microsoft became known for in the 1990's.
I emailed Tim Cook last night. No response yet....
This is a serious issue that has caused a major disruption for me. Is Apple brass aware of this?

Thanks for the tips on connecting with the Genius bar.
None of my preexisting bluetooth devices came over when I restored my iCloud back up. There was nothing to delete.
I am unable to view any Bluetooth devices period.

my Bower&Wilkins P7 headphones used to auto connect with my iPhone 7, now, with my updated and more expensive iPhone X I can’t do this anymore and need to manually connect every time my headphones to my photo. Lame...
Yesterday iOS 11.3 was released and two bullets were BT related. I was really hoping that this maybe could solve the connection issue with my car, but NO 😟
The issue remains. My case with Apple has been open since Dec 2017.

I also have this question. I am using Jabra Pro 925 headset. A connection did exist between the headset & iPhone X. But when the people hear me talking, the quality is a nightmare to them. Dear Apple technical team, Please deal with it ASAP! Thanks.
If the Samsung phone connects fine but nothing you can do will make your iPhone connect, feel free to make the switch.
However, as Apple tends to implement the latest versions of technologies, don't be surprised if a future Android update "breaks" the Samsung as well.
I just reset my phone and it did not help. I still cannot connect any audio functions to my Bluetooth sound link except a phone call. I have been using my phone through my car and on both of my Bose devices since I’ve had the phone. As of today it won’t play any audio. It’s connected, I can hear a phone call through it but not iTunes Pandora Spotify…Except a phone call. What can I do when I have already reset everything.
I'm having the same issue. My Garmin Speak/Alexa device is set to talk through my phone to my car via Bluetooth - keeps failing to do so. I cannot pair my Plantronics Voyager Headset (doesn't even see it). I'm on 11.4 IOS, and I *just* got the device a couple of days ago. I had to reset both my Garmin & my phone just for it to SEE the Garmin Speak - my iPhone 7 did not have this issue.
When does IOS 12 come out and does it resolve this? Anyone know?
