Odds are your bluetooth device was connected to your previous phone. Here is what I did to correct this problem.
On your old phone, go to it's settings and go to bluetooth and disconnect the device or forget the device.
Consult the owners manual of the device you're trying to connect, or look it up on the internet to get the instructions for that device to pair with bluetooth.
Follow the instructions on how to pair that specific device. Some want you to have your iPhone X turned on and searching for bluetooth devices, and some do not, so follow that manufacturers directions as if it is a brand new device that has not been paired yet.
This worked for me, and all is good in my iPhone X world now.
No, you are using Broadcom's and the Bluetooth consortium's bleeding edge technology, namely Bluetooth 5.2. Apple doesn't design or make either.
If you wander over to other manufacturers sites that use the same hardware/firmware you will see the same issues arise.
Yes. I am well aware of this and never stated Apple was the creator or designer. The point I’m making is that Bluetooth 5.2 is new for iPhones. The problem is real and should not be minimized just because some people aren’t having troubles.
No. That is exactly what I stated. The iPhone X with 5.2 Bluetooth is new for iPhones. It is like saying that the Tesla autopilot technology was new even though some aspects had been used on trucks for years. I think you get my point.

I think I solved the problem in my 2012 Subaru Outback.
Delete all connections both on the cars head unit and the phone. Go in the head unit navigation settings, telephone settings (not into the bluetooth devices settings at the music setup!) You will find all the connections from the past. Delete them all.
Tap on register device, and pair the phone. (It should give the code 1212 for pairing)
After this connected, works everything fine.

We have two Subarus: 2015 Forester (w/o navigation screen) & 2016 Outback (w/ navigation screen).
We have two new iPhone Xs.
Hooking up to the Forester was a PITA: erase old iPhone entry first, enter new iPhone next and then it did not work well AT FIRST. Eventually, without my doing anything else it began to recognize my iPhone and play whatever I had open BUT it takes about 6 full seconds after turning on the radio before the connection was made.
Hooking up to the Outback was easy-peasy.
Once I have added the iPhone to the Forester the order for connecting each day is: have BT turned on on the iPhone; have something that plays open on the phone and showing on the home screen (iTunes, podcast, etc.).; start vehicle: turn on the radio and navigate to BT and WAIT. For me, after about 6 seconds, the connection between the car and phone BT clicks in and the app open on the home screen begins to play. It has been doing that consistently for about a week now.
On the Outback, things just work better BUT one anomaly on both cars is: After making or taking a phone call, as soon as the call is terminated, unbidden the Subaru BT reaches into the iPhone and starts playing something: a podcast, iTunes, etc. This is a software bug and there is nothing you can to about it.
An update from my side:
Apple HQ called me two days ago. We have now installed a specific profile on my iPhone X to log the bluetooth connection and proximity. Tests has and will be done with various devices and my car, and then I'll send in all the sysdiagnosis to them next week.
It's important that we all help out here and support the engineers to solve this for everyone.
Was there ever a solution here? My issues with my IphoneX are similar but different. Some of my devices (Cars) will connect to bluetooth automatically. My B&W headphones however will only connect manually. If my headphones are on, I can go into bluetooth and tap the headphones and it connects. It sounds like the issues are similar.
Did that. Didn't work. This phone (iPhone X) will not connect to anything Bluetooth. As my other Apple devices running the same iOS version connect effortlessly, I can't help but think it's a hardware problem with the phone.
If you’re trying to connect to your car, search for Bluetooth on both car and device. The device keeps searching and does not pick up the car. The car should pick up the phone ID. When it does select the phone and enter any number to connect. Once you do this the phone automatically picks up the car and asks for the same number. It worked after about 3 attempts for me.

I also have problems with the bluetooth with iphone x, I tried with my car and that of my wife, when I make the phone call, the audio to the user is very disturbed. It works very well with the Airpods.
I made the network setting reset, but always the same.
Sounds like your older Prius has problems with the Bluetooth 5.2 chipset in the iPhone X. Unless Toyota plans to do an update your only option may be to contact AppleCare and wait to see if they can do something to fix it.
I did that. Apple Support walked me through the whole process including the hard shutdown. It still didn't work.
My iPhone X bluetooth works fine with a 2013 Prius and Apple Earbuds. It just doesn't work with the 2010 Prius.
Then I'm afraid there may be a bug in the 2010 Prius that only Toyota can correct.
For standards to work, both parties must write proper code, as the standard outlines what the responsibility of each device is.
Standards are also written to be backwards compatible, but unfortunately software is written by humans and so compatibility that should be present is not always there.
I would recommend you consult a Prius owner's forum to see if others with 2010s have had different experiences.
Seems to me that this is Apple's fault, not Toyota's. The 2010 Prius has been working for years and years with my older iPhones and devices of all sorts owned by hundreds of thousands of Toyota and Apple iPhone customers.
Apple came out with the iPhone X which should have been backwardly compatible with all those devices but you broke it. Apple needs to fix it.

That's not really right. You're experiencing issues with a car now 8 model years old and you expect it to be fully backward compatible. Not that that's unreasonable, but then you have to factor in the fact Apple simply can't be responsible for ensuring every car system out there (of which one must assume is a staggering number of systems) works with their phone. It's just not a very realistic expectation especially for a system that many model years old. That doesn't eliminate the angst you've got over this annoying situation, but the car companies have to take some responsibility too. There is clearly something in the Toyota system that won't speak with the iPhone. And Apple has no access to the software in your cars system. Only Toyota does.
