Good morning BigCountryLLC,

Welcome to the Apple Support Communities!

I understand you would like to know how to organize your PDFs in iBooks. The resource below explains how to do this. Even though the title says "Organize books" - this applies to PDF files as well. You can create collections based on whatever topic you want, then select your PDF files and move them to that collection.
