High Sierra Bootcamp Partition Problem -8gb 40gb

Hoping someone can help.
I am trying to install windows onto my late 2012 i7 Mac mini however I am having trouble partitioning the drive.
I am only given the option of 40gb or (bizarrely) -8gb (minus 8gb).
Clicking Divide Equally does nothing, neither does dragging the slider. If you just 'click' on the partitions it swaps repeatedly through 40gb and -8gb.
It happens whether it's windows 7 or windows 10 installed.
I currently have a fusion drive setup as below however I have also tried splitting them into two separate drives and I've also manually created a 120gb, 500gb, 500gb partition with one of the 500gb's as FAT - no success.
I've seen threads relating to the same thing going back several years with no fix arrived at, surely Apply have fixed this issue or don't they care about Bootcamp any longer?
