I got an email notifying that I need to update my credit card details so my iCloud storage could be backed up.
but I don’t want to leave my credit card details on my iPhone and I deleted the details.
is there a way to keep having iCloud charge me every month without having my credit card details in my iPhone

You could purchase iTunes gift cards, load their balances onto your account and pay for your iCloud storage with that. Just make sure you have enough of a balance every month to cover the costs.
