Hi sorry another question. Is the find my iPhone offline because my find my iPhone isn't turned on, on the phone that was stolen. To be honest I can't remember if I did activate it when I actually had my phone, before it was stolen. Thanks.

Please be aware that bobbyfromjeffersonville is spreading a very scary but not always very correct information. If your phone has a passcode on it, your data is safe. However, if you don't know what your Apple ID passcode is, that's another issue entirely and one you should deal with.

My son is working on his PhD in Mathematics, and he would be very disappointed in me too. However, the math he does now is nothing like what I remember going through school!! 😕

No, the SIM facilitates the ability to connect to the cellular network, hence, cellular data. A data connection is necessary to track, so it has to be wi-fi or cellular data to connect to the internet.
While the thief might be able to wipe the device, which would eliminate and protet all of your data, with Activation Lock, once they were able to wipe it, they would not be able to activate it, since the don't know the iCloud username and password. The phone would become useless to them.
