How can I locate and copy a single app from my iOS backup?

I have an app backed up on my computer that is no longer available in the app store. How can i find it to copy to another backup folder?

iPhone 7 Plus, iOS 11.3

You aren't able to manually pick through a backup file and extract individual files or apps. If you don't have a copy of the app through an older version of iTunes then you will no longer be able to use that app.
