I typed in all my close captions but they do not show up in the exported video.
I am using quicktime to view the video and under "subtitles" it says none even though I typed in all the captions.

FCP creates closed captions not open captions or subtitles. Look here to see how to convert.
As Tom wrote: what format are your captions - the ones you want to embed.
They must be CEA-608 to appear in the resulting file. The ones in your screenshot have too many characters to be valid CEA-608!
As they are not "flagged red" they seem to be iTT - those can't be embedded.

No, it is not the closed captions that are increasing the size.
It is the fact that you are exporting as ProRes. Export a master file, in Settings choose H264, and in Roles choose to export Closed Captions if you want to.

Closed captions is what I want. When I choose the settings in the closed captioning like the video (Apple ProRes), the file goes from 354 Mb to 10.7 Gb! Is that necessary to include closed captioning? Seriously, Apple needs to look at what Camtasia does. It's very limited, but this kind of stuff is easy.
