My Mother’s and Father’s iMessage conversations have combined meaning I can only message the Contact that has text me last. As the screenshot shows it would be impossible to text my mother unless she messaged me first; then I would be unable to message my father.

Well this sounds like something that needs to get straightened out quick. I'd start by going into your Contacts app, deleting whatever Mom/Dad stuff is in there now, and creating new contacts for both of them. Take extra care entering phone numbers and email addresses, since this might be the source of the confusion.
Then it wouldn't hurt to start a new thread with each of them, separately — just text them anything to get it going — and leave the threads open.

I have had exactly the same problem with messages to my wife & son. My wife also has the problem between myself & my son. I contacted Apple who told me to do as you have said. I thought it was all sorted until the next morning when the threads had merged again. If it wasn’t for WhatsApp I wouldn’t be able to message my wife & son. When are Apple going to rectify this as I think it’s disgusting to have happened in the first place & to have not been fixed by now!!! Just put iMessage back to how it was, quickly!!!
