I detest the changes made to my iPad keyboard layout. I want to get the keyboard I am used to back and if Apple will not provide a way to do this, I want to revert to the iOS 11 operating system. How do I do this?
You can provide feedback to Apple regarding the keyboard to see if they will change it back, but don't hold your breath on that one. The keyboard is part of iOS, so there is no way to change it in the Settings. You can take a look at a 3rd party keyboard if you wish. There are a number in the App Store. As far as reverting to iOS 11, Apple does not support downgrading. You cannot do it.
Chris, Apple support helped me get rid of the new Emoji layout and I am very happy about that. There is an "Edit" opportunity in the Keyboard settings window. When you click it, the Emoji keyboard listing gets a Minus icon next to it. Click the Minus and the Emoji key disappears. The layout looks to have returned to normal.
You can add the emoji keyboard back, go to Settings>General>Keyboard. This will not, however, change where it is located.
The only way to get Apple to listen to you is to use their feedback portion of their website.

Then I misunderstood what it was that you were trying to do. I never read where you were referring to emoji, and what the issue was. I guess I should have taken a little more time to find out what your exact issue was as far as the layout was concerned.
I did not explain very specifically, Chris. I assumed, wrongly, that everyone would have experienced the same keyboard layout changes. It was your suggestion that I give Apple my feedback that got me on the right track. I very much appreciate your response to my question.
Chris, I was able to hide the Emoji key by using Edit in Settings>General>Keyboard but once that has been done, my Edit opportunity is greyed out and I do not seem to have a way to restore the Emoji key if I want to. (I don't, but others may want to.)
Does anyone know if you delete Emoji in the Keyboard Control using the edit command whether you can get the Emoji back again using edit ?

Yes, you can get them back. They are only hidden.
What was Apple thinking? Emogies are cute. But we can’t use them in passwords or user names or forms! Put the number shift key back where it has been for 12 versions of the operatin system!
Thankfully Apple put the emoji key and numbers key back where they belong in iOS 12.0.1. I wonder how many complaints they got.
