Just figured it out!
-> Open Settings App
-> Click on Photos
-> Turn OFF “Summarize Photos”
Go back to your photo app and scroll to the very bottom. This view will show the “Other Albums” including the “Hidden” folder to find your hidden photos.

This literally just happened to me. Go to your photo albums. Scroll past all your albums to the end of the page. That’s where I found my hidden files and recently deleted files. Let me know if this worked for you.
