Restoring iPhone after Erasing

Having experienced some sluggish behaviour from my iPhone 6 I wiped it with "Erase All Content and Settings".

After restoring my data using an iCloud backup, I was surprised (and disappointed) to see that all of my Apps were also downloaded and restored as they were before erasing.

If I go through the process again, is there a way for me to stop the Apps from resynching and downloading ? I would like to be more selective so as not do clog up my phone with unnecessary data again.

Thanks !

iPhone 6, iOS 12

If you restore the device from a backup, it will restore everything that was on the device when you created the backup. If you don't want to restore all of your data, you need to restore the device to factory and then set it up as a new device. If your notes and reminders were in iCloud they would be restored. If you were using iCloud Photo Library, yes. Restoring everything else you would have to restore your backup. Restoring a backup is an all or none operation. You cannot pick or choose what you wish to restore when restoring from a backup. Your only alternative is to delete the apps you don’t want after restoring your backup.
