Settings -> General -> About. Go down the page to Operator / Carrier. Click Operator. Do you have the option to update there ? You may update through your Wi-Fi connection, I believe.

I had the same issue too with iPhone 5s on iOS 12.0.
Tried to reset network settings, change SIM card, hard reset the phone - nope. I also couldn't update to 12.1 from phone settings menu as it gave an error. And the phone did not show its IMEI in settings-main-about.
Then I updated it to 12.1 by cable through iTunes and everyhing works like a charm, and my IMEI and cellular network are back.
I have spoken to several Apple reps, then AT&T. AT&T told me Apple has a KNOWN issue specifically with the iPhone 7 losing cellular service and it has nothing to do with any carrier. Per Apple, this is due to a component failure on the main logic board and must be taken to an Apple Store or Authorized Apple Dealer for repair. I have an appt. with a dealer this afternoon and am keeping my fingers crossed it can be repaired. People cannot be without their phones!
Actually after talking on the phone for hours with both apple and Verizon and doing all there run through o got nothing. No they sent me a replacement phone because they couldn’t fix the issue. While trying to set up the replacement phone i accidentally took the SIM card out the messed up phone while it was on. I got nervous immediately turned it off and put it back it. Once I turned it back on everything worked. Data service everything was all back. But because I already had a replacement phone i sent that one away.
So long story short leave the phone on and remove your SIM card. Turn phone off and place SIM card back in. Give a few minutes and then lmk if it works. If not you will need them to send you a replacement phone phone. No charge

Next, do you have any error messages? Does it say "No Service" at the top of the screen? If it does not say "no service" there is a problem with your carrier's network or your the setup for your account with your carrier.
What model phone do you have? If it says "no service" and it's an iPhone 7 see: iPhone 7 Repair Program for "No Service" Issues - Apple Support

If you’re having service issues I’d recommend going to:
Settings > General > About > Model Number (click on the model number to see the other digits).
According to Apple, affected units with service issues were manufactured between September 2016 and February 2018 and were sold in China, Hong Kong, Japan, Macao, and the United States. Model numbers that are impacted by the hardware failure include A1660, A1780, and A779, and customers can see if they are affected by checking the model number on the back of their device. Or as I said before this paragraph. If your phone model is what’s specified above you can schedule an appointment at an Apple store, and they’ll replace it once eligible at no extra charge. I currently have this problem and had it for about a month, just never got around getting it replaced.
All I had to do was force restart.
Several restore and updates didn't work.
Tried updating only and via iTunes and Voila, the thing is functioning perfectly
But iTunes must be the latest version.
Yes i had attempted that but it didn’t give me to option after going thru settings>general>cellular, no update just the “learn more” button which took me to an apple support page saying my “cellular modem”(antenna?) may be damaged. So I took it to the apple store>Genius Bar and left with a new phone(or refurb w/e)...thank goodness for apple care covered every cent of it..I have a 90 day warranty so I hope this works out.
In my IPhone 7 I went into settings/general/reset/. In there you’ll see a few options, I chose to try reset network settings and it powered down the back on again. I now am receiving signal and haven’t had any issues so far.

Try removing the SIM card while the phone is ON. Then turn phone off, put SIM card back in, wait about 10 mins and turn phone back on.
So I’ve been having this issue for a few days now. I have an IPhone 7. My cellular data would be fine, and then out of nowhere it would stop working.. it went back and forth for a couple of days but tonight it stopped working completely!
I have tried everything to fix it, and I just now got it to work (I don’t know how long it will stay on though). Anyways, I did what someone else suggested..
I my SIM card out while the phone was on > turned the phone off > replaced the SIM card back into my phone > waited a few minutes > turned it on
