I recently bought an iPhone 8 and it’s running iOS 11, my old iPhone 5 runs iOS 12.1 beta. If I restore the ios 12 backup to my new iPhone, will it update the iOS version to 12 from 11 or will it just transfer app and other data?
You won’t be able to restore the backup without separately updating the iOS version.

Unless you have an archived backup of your device from before you enrolled in the beta, and you don't mind loosing any changes you've made in the interim, you will need to move the iPhone 8 to the same build of iOS as is running on the old iPhone before you can restore a freshly updated backup of that old phone to your new one.

You’d need to move your data manually instead of using the backup. The same point applies to iCloud backups.

Isn’t there a way to avoid this as I want to keep the newer iPhone on iOS 11 but I also need all my data. I can’t use iCloud backup because I don’t have internet fast enough for that.
And how do I do this?
