My ex wife can remotely access my iPhone.
She knows what messages I send with Whatsup and she knows what I’m talking on the phone and with whom?
if she’s calling me after we talk the phone is losing network the car Bluetooth is disconected by is self.
What can I do to stop that?
The only way any of this can happen is if (a) you were sharing an Apple ID, or she knows your password, or (b) your iPhone was jailbroken and thus hackable (no way otherwise).
The highly probably scenario is (a) in which case you should immediately change your Apple ID password and enable Two Factor Authentication.

To be clear, you have already changed your password and she still had access to your privacy, or you changed the password after you noticed the breach?
Also, if your iPhone is jailbroken then your warranty is void and there's really nothing that can be said but for you to figure out how to undo that, if you can. That would be the first step, to get your device back to the secure enclave it provides (if possible).
