How do I remove apps from the doc on Mac?

I have a MacBook Pro Retina 13-inch running the Mojave (v. 10.14.1) and I keep on having the apps on the dock every time I open them, even if I alway choose not to show them.
With the last software I didn't have this issue... is it a problem of the Mojave? Can it be solved?

Uncheck "Show recent applications…" in System Preferences > Dock.
