The mail app will open all by its self. After checking mail and then minimizing the app, it will suddenly just pop open again. There is no new mail in the inbox when this happens.

To be clear, it's running, but with NO windows actually open. It will then seemingly randomly open the application window by itself.
As a follow up, I would like to consolidate my findings in hopes of expediting a solution.

You will be happy to know that my saphire CRYSTAL glass apple watch, the 5th kind, has scratched. in fact, there are several small scratches. very ridiculous, i bet its fake saphire.

Agreed. I have been taking my 64GB macbook pro to the apple store every single day, but they have not helped me yet. I do have apple care + which costed half my left leg.

I have not dished out 4k USD on a macbook pro to use “very simple workarounds” I expect the apple to give me massages while it doesn’t auto-open the mail app.
