Using an international Sim on European Iphone
Can you advise if I purchase an iPhone 8 from Apple UK website, will I be able to use both a european sim and/or an international (Chinese) sim?

You must confirm with the shop that sells you the phone that it is "SIM Free". That is, that is not restricted to using only a SIM that was issued by one phone company. The only way to truly confirm this is to insert another phone company's SIM into the phone and confirm that no "SIM not valid" message comes up.
Does your Chinese SIM roam successfully into the UK? Is it 4G enabled? If so, you should be able to put that SIM (if it's nano size) into the iPhone and test it. If you get a UK carrier's name and signal strength bars, you're good to go. If you get "SIM not valid," either the phone is SIM locked or your Chinese SIM is not enabled for 4G.
