What is this new response I get when I say Siri? she says uhhuh instead of yes? I have iPhone 11 Pro Max I really don’t like response and want to change it.

That’s because no one taught you to speak English properly. “Uh huh” is a rude and dismissive expression and if you family members spoke to you that way it was unfortunate. We should not encourage anyone to think that is normal and acceptable speech.

Who cares?! It's the way Americans behave towards one another lately anyway! Disrespectfully and rude!!! Seems to go along with the current divisiveness in this country.
Just got the rude grunt from Siri on my new phone. I said, “EXCUSE ME?!”, but she didn’t respond, I guess she went back to whatever she was doing. What surly teenager at Apple thought this was ok?!
Who at Apple would have decided that having Siri answer with "Uh-huh" was a good idea? SO many people are unhappy with it!

The newer phones (starting around the iPhone X) have faster processors. You don't need to wait.
