Just updated to Catalina with my iMac Pro 2017 & the dock has disappeared this morning. It was here last night after the update but nothing today.
It won't show again - anybody experiencing this too ?
Changing the dock settings in System settings did not work for me, but following sure did:
To prevent the Dock from hiding, open Terminal and execute the following command:
defaults write com.apple.dock autohide -bool false; killall Dock
autohide -bool false turns off the autohide. killall Dock kills the current Dock process. It will then automatically restart with the autohide setting off.

This is not a solution. I unplug my second monitor and reboot. The dock shows up. Then when I reboot, it disappears again. It's driving me nuts.
Upgraded to latest 10.15 and this has solved the problem 👍🏻
I have a Late 2016 Macbook pro with 2 LG UltraFine 5k displays. Ran into the same issue after upgrading to Catalina. No solution yet
I upgraded to latest update 10.15+ and it fixed this problem. Check for software update

Same Issue on 12" macbook, Dock was back after running First Aid in Disk Utility.

As an update to this, the dock was gone again after I had shutdown and started up the computer again after a few hours.
Friend Sorry but the disappearing Dock is a Catalina bug and yes there are several ways it get the dock back but they aint permanent. We have to wait for Apple to fix it..........
Wasn't this fixed in 10.15.1? I have not had a recurrence since that update.
